SPOONFUL - Bacon and Cheese Hasselback Potatoes

It's been a while since I've posted a new recipe. So here's another easy recipe that is quite interesting to make and to eat. Read on!:

BACON AND CHEESE HASSELBACK POTATO


Ingredients:

Medium sized potato
Cheddar cheese, sliced
Bacon, chopped
Thyme, dried
Rosemary, dried
Olive oil
Salt and pepper to taste
Spring onion, chopped.



Procedure:
1. Wash and scrub potato to remove any dirt.
2. Slice potato into a hasselback.
*tip: place potato in between a pair of chopstick to keep the knife from slicing all the way through
3. Season with salt, pepper, thyme and rosemary. Sprinkle with olive oil
4. Bake potato for 5 minutes at 300 F to open slices.
5.  When slices are slightly opened, insert cheese in between slices.
6. Top with chopped bacon and bake again at 300 F until cheese is melted and scorched.
7. Sprinkle with chopped spring onions and serve.
