SPOONFUL - SOTANGHON SERIES NO. 1: Thai Beef Salad

I'm calling this "Sotanghon Series". Why? Well, my father brought home a large bag of vermicelli noodles (or in Tagalog, sotanghon) and I've decided to create recipes out of it and place them here on the blog.
So be prepared for more recipes using vermicelli noodles. This will be easy recipes that require little ingredients or ingredients that are easily available.
Anyway, for the first one, here is my recipe for Thai Beef Salad
INGREDIENTS:
beef sirloin
salt and pepper
paprika
olive oil
glass noodles/vermicelli
carrots, julienned
wansuy, chopped
kichay, chopped
red onion, sliced
toasted peanuts
red chili, chopped
Dressing:
lemon juice
fish sauce
sugar
honey
PROCEDURE:
1. Marinate beef in salt, pepper, paprika and olive oil. Sear in hot pan. Slice into strips
2. Soak noodles in hot water until soft. Drain properly. Cut into shorter length.
3. Prepare dressing. Mix together lemon juice and fish sauce. Add sugar and honey depending on desired sweetness. Dissolve sugar completely
4. In a bowl, combine drained noodles, chopped wansuy and kinchay, julienned carrots and chopped onions. Add seared beef strips. Add red chili.
5. Add prepared dressing into salad and toss.
6. Top salad with toasted peanuts.
7. Chill salad before serving.
Enjoy!
